Yum Yum Kimchi

Because one can never have too many different types of fermented I made kimchi. 
Kimchi is a traditional Korean spicy salted fermented cabbage side dish. 
A yummy alternative to sauerkraut if you like a bit of spice.
It also only needs about 3 days of fermentation before its ready to eat.
